Julia Busuttil Nishimura’s Roasted Tomato Summer season Soup With Mozzarella

JULIA’S Roasted tomato soup with basil and mozzarella (serves 4)

2kg Roma tomatoes
8 cloves garlic, left entire of their pores and skin
3 shallots, roughly chopped
2 stems of basil
1/4 cup further virgin olive oil
Sea salt

Basil oil
Giant handful of basil leaves, finely chopped
Further virgin olive oil
Crimson wine vinegar

Sea salt, to style

250g buffalo mozzarella, to serve

Grilled bread, to serve

Technique

Preheat the oven to 180C. 

Halve the tomatoes and take away the core from the highest. Prepare them reduce facet up onto a big roasting or baking tray. Tuck within the garlic, shallots and basil amongst the tomatoes and drizzle with the olive oil. Scatter generously with sea salt and roast for 1 1/2 hours or till the tomatoes have collapsed and have caramelised in spots. Take away the basil and discard. Squeeze the garlic from their skins and place in a meals processor or blender together with the roasted tomatoes, shallots and any liquid on the backside of the tray. Blitz till very clean and season to style 

In the meantime, for the oil, merely place the chopped basil in a small bowl and pour in sufficient olive oil to make it a spoonable consistency. Add sufficient crimson wine vinegar to offer it some sharpness, a couple of teaspoons needs to be sufficient, and season to style with sea salt. 

Ladle the soup into serving bowls and tear in some mozzarella. Drizzle over among the basil oil and serve with grilled bread.
