200g unsalted butter, softened
200g caster sugar
3 eggs
Juice and zest of two limes
150g bitter cream or crème fraîche
100g desiccated coconut
250g self elevating flour
125g raspberries, plus further to serve
Lime bitter cream glaze
70g bitter cream or crème fraîche
150g Icing sugar, sifted
Zest of a lime and juice, if wanted
Shredded coconut, to serve
Technique
Preheat oven to 180C. Grease and line a 23 x 13x 8cm loaf pan.
Cream the butter and sugar with a picket spoon or in a stand mixer fitted with a paddle attachment till mild and fluffy (round 3 minutes). Beat within the eggs, separately, adopted by the zest and juice of the limes. Combine within the bitter cream then the coconut. Lastly sift within the flour and stir till simply mixed. Gently fold within the raspberries and spoon the batter into the ready cake tin and bake for 50-60 minutes till a skewer is clear when inserted or the highest of the cake bounces again when pressed. Permit to chill within the tin briefly then full cooling on a wire rack.
Make the glaze by combining the bitter cream in a medium bowl with the icing sugar and lime zest. The glaze must be pouring consistency, however not too thick. Add in a bit lime juice if wanted. Whether it is too skinny, add some extra icing sugar. Pour the glaze over the cake and permit it to drip down the perimeters. Scatter with some shredded coconut and serve with further raspberries, if desired.

Ricotta cannoli from T. Cavallaro and Sons in Footscray. They make the BEST cannoli in Melbourne – piped to order for optimum crispness and a not-too-sweet ricotta filling. Gerald’s Bar in North Carlton have been not too long ago promoting them which suggests we may take pleasure in them safely inside our 5km zone! It’s the little issues!
